Get in the Zone


I grew up calling these crescent shaped pizza like pockets, pizza turn-overs. Whether its a pizza turn over or calzone these delicious bundles stuffed with tomato and mozzarella are mouthwatering & best part is that you can dress them up with the works.

Tofu?


The whole idea about tofu always distrubed me- a firm, white, block that looked artificial and definitely not edible. I never really knew what it was except for vegetarians ate it. Needless to say I never gave it a chance until my roommate made this recipe for dinner the other night. Don't get me wrong, I was skeptical about the whole idea of extra-firm, water- packed tofu substituting ricotta, because let me tell you- I'm a cheese lover. However, after my first bite I wasn't disappointed. As a matter of fact, I wouldn't of been able to tell that there was tofu in my lasagna unless I was told. So to all my doubtful picky eaters next time you take a walk down the fresh produce section keep your eyes peeled for tofu.

Sassy Chicken Tenders


It's a crowd pleaser folks!

I whipped up a simple childhood favorite into a clean-plate gourmet meal. When your traditional frozen-bagged chicken nuggets aren't doin' it for ya anymore, I definitely recommend this one - Parmesan crusted tenders with a balsamic honey vinaigrette drizzle and garlic/chive mashed potatoes. Its fast, easy and healthy. By the time you pre-heat your oven for those frozen hockey pucks, you could be done searing your tenders and have the plate on the table.

Cheddar & Chive popover. I've didn't even know what a popover was until I stumbled upon this recipe but it looked really good and great for a savory breakfast snack.

Just Dip It


Buffalo Chicken Dip = Delicious :D

Tired of the traditional french onion chip dip or salsa? Try this big flavor dip that will leave you wanting more!

Ingredients-
2 cans of chicken
2 (8-ounce) package of cream cheese
1 cup of ranch salad dressing
3/4 cup of buffalo hot sauce
3/4 cup of shredded parmesan cheese
1 cup of shredded cheddar cheese

Heat chicken and hot sauce in a medium/large skillet over medium heat.
Stir in cream cheese and ranch dressing. Stir until blended and warm.
Mix in shredded cheese and serve hot.
Great with celery, tortilla chips, crackers and if you want to get really creative spread on top of a ET bagel

Cookie Dough Truffles




So the other day, I was thinking that I needed something sweet in my life. I was introduced to these chocolate-chip cookie dough truffles at a Christmas party a few months back and they were absolutely to die for. I was so happy when I found the recipe online. They were so simple to make and the recipe makes about five dozen, so to say the least I had some left over. It worked out perfectly though, I wrapped up the extras and gave them to my friends as a sweet spring treat!

Butter My Biscuit


I snapped a few shots while making biscuits & gravy for dinner. I thought I would switch things up a bit and have breakfast. I love simple recipes- I just popped some canned biscuits in the oven and added milk to a packet of country white gravy in a saucepan and whisked it into a frenzy. It was a perfect meal for a cold day, needless to say I was a happy camper!
